Windmühlenmesser Santoku Knife – Glazed Beechwood Handle
This is the larger version of the brand's standard 14 cm model.
The blade is forged from chromium-molybdenum-vanadium stainless steel (1.4116 steel) with a hardness of 56–57 HRC. This stainless alloy withstands contact with meat juices, blood, and cooking sauces; the knife will not oxidize.
Although this type of stainless steel is often difficult to polish to a fine finish, it has undergone the "blue polishing" process.
The blade features a mirror-like finish.
Blue polishing: The bluish finish traditionally known as *Blaupließten* in German (translated as "blue polishing" or "blue grind") represents the pinnacle of Solingen craftsmanship. It is an extremely complex and rare blade-finishing technique; the Robert Herder manufactory is one of the last in the world to master and teach it.
Glazed beechwood handle: A surface treatment in which the beechwood is intensively polished, smoothed, and treated to achieve a glossy, vitrified finish that protects it from moisture and water contact.
Do not place in the dishwasher.
