Sauveterre was the capital of Rouerguate cutlery.

At the end of the Middle Ages, Sauveterre had around thirty blacksmiths.
Unfortunately, in the 16th century, there was a major decline in cutlery in Sauveterre due to the wars of religion and plague epidemics. In 1998, following the success of a TV series about a Parisian returning to Sauveterre to take over his father's cutlery business, a Sauveterre folding knife was designed.
The cutlery business was bought by Christian Valat, owner of Laguiole en Aubrac in 2018.
The Sauveterre folding knife takes the shape of the straight Laguiole. It is slim, elegant, refined and has a very effective blade for use during meals.
