SABATIER, a french brand, a Thier's brand.

The Sabatier knife was born in Thiers' Basin at the beginning of the 19th century. It carries the name of local family whose ancestors created a shape of knife destinated especially to professionals in catering (butchers, restaurateur...).

Since 1812, the SABATIER LION BRAND made knives in the respect of tradition and know-how of its illustrious predecessors

The steel now chosen by Lion Sabatier (and 32 Dumas Ainé) for all its forged series is the 4116 NITRO+ produced in France by Ugitech®, a stainless steel (X50CrMoV15) reinforced by a nitrogen supply 

Its qualities: superior hardness, cutting durability and corrosion resistance.
Rockwell hardness: 58/60 HRC.

Its composition:
Chrome-Molybdène-Vanadium (X50CrMoV15) + Azote
Cr (Chromium) : 15 % - Mo (Molybdenum) : 0,8 % -  C  Carbon) : 0,55 % - V (Vanadium) : 0,2 % - N (Nitrogen = Azote) : 0,15%
