Kanetsune Japanese knives YS-900 series

Superb series of Japanese knives Kanetsune made in Seki, Japan

We are still in the Japanese tradition and know-how mixed with modern steel techniques.
This series of knives is made of Swedish Sandvik 19C27 stainless steel with a high carbon content.
The knife has a hardness of 60-61HRC which gives it a razor sharp edge and excellent holding power.
High corrosion resistance.
The handle is made of high temperature compressed black wood and is recommended for use in the kitchen.
