Jérémie Plane is the founder of the KOTAI brand. He left France for Japan where he started cooking. After having experienced a lot of problems with his knives because of the maintenance required to keep them from rusting, he had to look for an alternative, to make these kitchen knives combining Japanese qualities with the resistance and sturdiness of western knives.
KOTAI knives are handcrafted from high quality Japanese 440C steel from Aichi. Others are assembled by their expert knifemakers in YangJiang, the cutlery capital of China for over 1500 years.The handles are made of ebony or Pakkawood, a heat and moisture resistant composite.The production of the knives combines traditional manufacturing methods with modern technological processes such as vacuum heat treatment and cryogenic cooling.
Every Kotai knife comes with a lifetime warranty. One motto at KOTAI:
