The Petty: A universal knife between the paring knife and the filet de sole knife: for chopping meat, vegetables or herbs, or mincing.
The term Petty refers to utility knives.
It has a Sandvik 19C27 stainless steel core mixed with SUS410 stainless steel. 
Hardness 60-61HRC
Its 15 cm coated blade cuts like a razor blade with an ultra-smooth edge 
The riveted natural black wooden handle offers excellent grip and hold.
