67-Layer Damascus Kiritsuke Knife
Rooted in Japanese culinary tradition, the Kiritsuke knife features a long, slender blade with a straight tip. It combines the functions of two other traditional Japanese knives: the Yanagiba, used for thinly slicing fish, and the Usuba, designed for precision vegetable cutting.
These knives are prized by professional chefs and home cooking enthusiasts alike. They are a strategic choice for cooks seeking a single, all-purpose knife.
Designed to combine precision and versatility, the Kiritsuke is an exceptionally adaptable tool for a wide range of tasks, including slicing vegetables, fish, and meat.
Features a 67-layer Damascus blade with a 10Cr15CoMoV stainless steel core. A hardness of 60 HRC ensures a sharp edge that is also easy to sharpen. The flat grind allows for precise cutting.
Symmetrical blade with a 15° edge angle per side (30° total).
The handle is crafted from resin, carbon fiber, and gold leaf ("Sakin" means gold dust) and features a mirror-polished finish.
Two stainless steel rivets, a mosaic rivet, and a stainless steel bolster and end cap make this knife truly unique.
Each knife comes in a presentation box.
