Excellent knives to cope with the different cuts of your daily food. VG10 is a Japanese steel appreciated by Japanese cutlery for its high carbon percentage which gives it a hardness of 59-60HRC.
Sharpening them produces a razor sharp edge, the carbon also helps to maintain the edge over time, to space out sharpening sessions.
The upper part has been hammered and each knife is a unique piece.
These knives keep their sharpness 2 to 3 times longer than a European steel knife. A V-shaped hand sharpening is carried out on each of the knives using a leather strip for a perfect cut from the very first use!
The handle is made of olive wood, a noble wood that is very pleasant to the touch, it has been sanded and then treated for greater resistance. Each handle is unique thanks to its grain and the grip is perfect.
The pommel is engraved in Japanese, a character representing the "Tiger".
