Wusaki Sakin Damascus 67-Layer Ko-Santoku Knife
In Japanese, the term "santoku" literally means "three virtues," referring to the tasks typically performed in the kitchen: slicing, dicing, and chopping.
The ko-santoku offers an intermediate size for everyday cutting tasks; its 13cm blade strikes an excellent balance.
It stands out for its versatility, making it suitable for quickly slicing vegetables, preparing herbs, or cutting smaller ingredients.
Its compact size ensures excellent control during use. It serves as a great middle ground between a paring knife and a standard santoku.
Knives in the Sakin range feature a 67-layer Damascus steel blade with a 10Cr15CoMoV stainless steel core. With a hardness of 60 HRC, the blade offers excellent edge retention while remaining easy to sharpen. The flat grind ensures precise cutting.
Symmetrical blade with a 15° edge angle per side (30° total).
The handle is crafted from resin, carbon fiber, and gold leaf ("Sakin" means gold dust) and features a mirror-polished finish.
Two stainless steel rivets, a mosaic rivet, and a stainless steel bolster and end cap make this knife truly unique.
