In Japanese, the term "santoku" literally means "three good things" in relation to the tasks usually performed in the kitchen: slicing, cutting, chopping.
It is therefore the Japanese version of the European chef's knife.
The blade has an exceptional strength of 63 degrees Rockwell.
Its core is made of ultra-hard SG2 stainless steel micro-powder with a high carbon content, ensuring a high level of purity and a particularly sharp cutting edge.

Each element used to create this steel is uniformly blended, eliminating weak points and imperfections.
Each side is wrapped in 96 layers of stainless steel, presenting a particularly successful damask.
Each blade is coated with the hand-engraved Super GOU YPSILON signature.
The elegant handle is made of black micarta, highlighted by two red spacers and inlaid with the Samurai Spirit symbol.
Micarta, an extremely durable material made of 40% resin and 60% flax, resists heat of 150°.
