Wusaki Fujiko Black San Mai Chef's Knife
The ideal chef's knife for cutting herbs, vegetables, and meats, thanks to its broad, pointed blade.
It features a smooth San Mai stainless steel blade. The knife is constructed with a central core of hard 10Cr15CoMov stainless steel; its high carbon content reaching 1.05% ensures an exceptionally sharp edge.
However, because the steel is hard, it is prone to cracking if subjected to repeated impacts.
To address this, a layer of softer steel has been added to each side of the core to provide flexibility. The flat grind allows for precise cutting. This design results in a razor-sharp, durable cutting edge supported by a structure that offers remarkable resilience during use.
Symmetrical blade with a 15° grind per side (30° total).
The handle is made of Pakkawood; its high density makes it moisture-resistant. This composite material is created by heat-compressing wood veneers with resin. It requires no special maintenance simply hand washing. The handle is finished with a stainless steel bolster and end cap the latter featuring the Japanese kanji for "Tiger"as well as a mosaic rivet and two red accent rings.
