The 1896 range of knives designed by Oreste Frati, a talented designer who works in collaboration with Fox Knives.
Oreste Frati was inspired by the design of classic European chef's knives.
In Japanese, the term ‘santoku’ literally means ‘three good things’ in relation to the tasks usually carried out in the kitchen: slicing, chopping and mincing.
It is therefore the Japanese version of the European chef's knife.
The blade can be fitted with cavities, for very fine slicing of rich-fleshed raw fish (salmon, trout, etc.) as well as delicate fruit and mushrooms. The dimples in the blade prevent food from sticking.
The satin-finish blade is made from X50Cr15MOV stainless steel, for a flawless, smooth cutting edge. This steel is resistant to corrosion and easy to sharpen. HRC 57.
Rounded dark walnut handle. Handle attached to the full tang blade by three rivets.
Do not put in the dishwasher.
Dry the knife immediately after washing to prevent the wood from splitting or losing its beauty.
