The NAKIRI: The Japanese Nakiri knife is a knife with a high, completely rectangular blade, entirely Japanese in shape and design, featuring a blunt-tipped blade typically measuring between 17 and 19 cm. Furthermore, the cutting edge is very often perfectly parallel to the spine of the blade.
The Nakiri is used for slicing root vegetables or leafy greens, cutting regular julienne or brunoise strips, or finely chopping herbs.
It is often referred to simply as a vegetable knife due to its height, which allows the blade to be used like a spatula to transfer sliced food from the chopping board to a bowl.
This model is 100% forged, meaning it is made from a single piece of steel heated and stamped at 1200°C to form a single block comprising the blade, bolster and tang, thus ensuring robustness and longevity.
