Product Details

Renowned German chef Tim Malzer has partnered with the exceptional craftsmanship of Japanese knife maker Kai to present the "Shun Premier" series.

This is a premium 23cm Japanese bread knife. Designed to effortlessly slice through even the toughest crusts while protecting the crumb, it stands out thanks to its unique, technologically advanced serrations.
Unlike traditional Western bread knives with sharp teeth that tend to tear and crush food, the TDM-1705 incorporates a patented reverse serration design by Kai. The delicate crumb remains perfectly airy and fluffy as it is sliced, and the ripples created by the cutting edge glide effortlessly through the rigid crust of a loaf or baguette.

It also excels at cutting large pieces with hard skin and tender centers, such as squash, melons, pineapples, or crusted roasts.

Tim Malzer's Shun Premier series is a resounding success with the most discerning chefs.

These knives are crafted from 32-layer hammered stainless Damascus steel with a VG-10 steel core. This premium steel, exceptionally corrosion-resistant, boasts a Rockwell hardness of 61 +/- 1, ensuring a long-lasting edge and outstanding cutting performance. The convex blade profile, combined with hand-sharpening each piece individually, guarantees remarkable cutting precision.

Finish: The surface is hand-hammered using the traditional Tsuchime technique, creating micro-bubbles of air that prevent moist or sticky foods from adhering during cutting.

The elegant and robust pakkawood handle is adorned with a bolster engraved with a bull's head, a distinctive signature of the collection. It is treated with high-quality resins to be completely waterproof and hygienic.

Its symmetrical shape is suitable for both right- and left-handed users. Finally, the full tang ensures perfect balance and excellent stability during use.

Do not put in the dishwasher.
