Tojiro Basic Nakiri Knife (16.5 cm blade)
The NAKIRI: The Japanese Nakiri knife features a tall, fully rectangular blade distinctly Japanese in shape and style with a blunt tip and a length typically ranging from 17 to 19 cm. Additionally, the cutting edge is usually perfectly parallel to the spine of the blade.
Often referred to simply as a "vegetable knife" due to its height, the blade can function like a spatula, allowing you to easily transfer sliced food from the cutting board to a container.
VG10 stainless steel blade with two outer layers of softer stainless steel (hardness 60-61 HRC). Exceptional cutting edge that is easy to sharpen. This version features a partial tang, meaning the metal does not extend all the way to the end of the handle. Semi-sandblasted finish.
Pakkawood handle (compressed wood resistant to moisture and daily wear). Small "beak" at the end of the handle for a secure grip.
A lightweight knife with weight distribution towards the front of the blade.
To maintain your Japanese knives, hand-washing is recommended; try to keep the handle dry. Avoid abrasive sponges; simply wipe with a clean, dry cloth, and your knife will look brand new.
Do not use a dishwasher if you want your knives to last.
