The NAKIRI : The Nakiri Japanese knife is a high blade knife, totally rectangular, with a totally Japanese shape and inspiration, and with a blade without a point, of an agreed size between 17 and 19 cm. The cutting edge is very often perfectly parallel to the back of the blade.
Often called a vegetable knife for short because of its height, which allows the blade to be used as a real spatula, to carry sliced food from the board to a container.
Usual length of the blade: 14 to 18 cm - symmetrical blade.
The core is made of #2 blue steel (non-stainless carbon steel) coated with 11 layers of damascus.
Hardness 61-62HRC
Its 16.5 cm coated blade cuts like a razor blade with an ultra smooth edge
The handle is made of red sandalwood with a D-shape and a black Pakka bolster.
It offers an excellent grip and a perfect hold.
