This is the best-selling model among Japanese knives, as its functions are truly versatile: it easily cuts all types of meat, fish, vegetables, and even the most fragile fruits such as strawberries.
Its straight blade can be dimpled, which reduces resistance when cutting and prevents food from sticking to the blade (fatty fish for example)
Usual length of the blade: 14 to 18 cm - symmetrical blade.
The core is made of #2 blue steel (non-stainless carbon steel) covered with 11 layers of damascus.
