The Kiritsuke: Knife with a straight blade back that goes to the tip, unlike the chef's knife with its rounded blade.
It is equipped with a sharp, high blade to facilitate all your cutting work.

The core is made of #2 blue steel (non-stainless carbon steel) covered with 11 layers of damascus.
