Yaxell's Gou range of Japanese knives has an exceptional cutting edge and a fascinating 101-layer damask.
Nakiri Knife - 18 cm blade, smooth edge ideal for cutting your vegetables and looks like a chopper.
The blade owes its extraordinary sharpness to its high-quality composition: a core made of SG2 stainless steel micro-powder, rich in carbon and with a hardness of 63 Rockwell.
Each side is wrapped with 50 layers of stainless steel, with a particularly good damask finish.
The handle consists of several layers of quality steel firmly welded to the blade and covered with black polished micarta with an impeccable finish.
Micarta is an extremely durable material made of 40% resin and 60% linen.
The Gou logo is engraved on the end of the handle
