Japanese Nakiri Knife, Kanetsune Mukashi-Nagarano Series
The NAKIRI: The Japanese Nakiri knife is a tall, rectangular knife, entirely Japanese in shape and design, with a blunt blade, typically between 17 and 19 cm long. The cutting edge is very often perfectly parallel to the spine of the blade. Often called a vegetable knife for simplicity due to its height, which allows the blade to be used like a spatula to transfer chopped food from the cutting board to a container.
Typical blade length: 14 to 18 cm - symmetrical blade
Blade made of Blue Steel Core #2 HRC 61-62 with an attractive mottled black finish known as "INAKA".
Forged using the traditional "Hizukuri" technique.
Handle material: Magnolia wood with a plastic cushion.
These kitchen knives are crafted by young artisans dedicated to preserving traditional techniques and passing them on to the next generation, thus breathing new life into each piece.
Each knife is unique and may exhibit slight variations and irregularities.
