Gyutou Minamoto Kanemasa M series chef's knife, Kanetsune engraved on the blade 

A Japanese chef's knife ideal for slicing vegetables, meats and removing bones without shredding the meat.
It has a vergin carbon steel in NKS32 for better edge retention
Hardness 59-60HRC.
Its 21 cm white blade with an outstanding cut thanks to the carbon, it is a razor blade with an ultra smooth edge 
The handle is made of natural black compressed wood, riveted to provide excellent grip and a perfect fit. 
Full tang construction with welded bolsters for professional use
