Usuba knife 3000 series with Kanetsune inscription on the blade
The Usuba is the traditional Japanese vegetable knife. Its straight blade is useful in the "Katsura-muki" technique, which consists of removing the skin of vegetables in very thin slices in order to garnish sashimi.
It is therefore very useful for slicing very thinly all vegetables, even very hard ones like radishes. It cannot be used for cutting bones or for chopping.
