Usuba knife 3000 series with Kanetsune inscription on the blade

The Usuba is the traditional Japanese vegetable knife. Its straight blade is useful in the "Katsura-muki" technique, which consists of removing the skin of vegetables in very thin slices in order to garnish sashimi. 
It is therefore very useful for slicing very thinly all vegetables, even very hard ones like radishes. It cannot be used for cutting bones or for chopping.
usual blade length: 17 to 18 cm - generally asymmetrical blade
Blades coated with a VG-10 stainless steel cutting core and 3 San Mai layers, sandwiched between SUS410 stainless steel which offers excellent edge retention with a hardness of 60HRC Its 16.5 cm coated blade cuts like a razor blade with an ultra smooth edge.
The handle is made of natural plywood stained wood.
3 rivets and logo on the handle.
It offers an excellent grip and a perfect hold. 
A superb, high quality knife is very durable, made by professional Japanese cutlery makers.
