Windmühlenmesser paring knife with glazed beechwood handle
A medium-sized paring knife with a centered tip (*Mittelspitz*).
Unlike the classic *Klassiker* model with a drop point (the "German point" style seen on the RH.1482), the *Mittelspitz* profile features a symmetrical tip positioned exactly in the center. This is the traditional shape preferred in Switzerland and Southern Germany, ideal for peeling and coring fruits and vegetables directly in the palm of your hand.
Blade forged from chromium-molybdenum-vanadium stainless steel (1.4116 steel) with a hardness of 56-57 HRC. This stainless alloy withstands contact with meat juices, blood, or cooking sauces; the knife will not oxidize.
Although this type of stainless steel is often difficult to polish to a fine finish, it has undergone the "blue polishing" process.

Blue polishing: The bluish finish traditionally known as *Blaupließten* in German (translated as "blue polishing" or "blue grind") represents the pinnacle of Solingen craftsmanship. It is an extremely complex and rare blade finishing technique; the Robert Herder manufactory is one of the last in the world to master and teach it.
Glazed beechwood handle: A surface treatment in which the beechwood is highly polished, smoothed, and treated to achieve a glossy, vitrified finish that protects it from moisture and water contact.
Do not put in the dishwasher.
