Tojiro Zen Japanese Paring Knife (13cm blade)
These knives feature short, rigid blades sometimes with a "bird's beak" shape and are used for peeling, dicing, and slicing small vegetables, as well as for tasks like larding, peeling, and garnishing; they are arguably the most frequently used knives in any kitchen.
The blade features a core of VG10 stainless steel (enriched with cobalt and carbon), clad in two layers of softer stainless steel.
Asymmetric grind. A razor-sharp blade.
Suitable for both right- and left-handed users.
D-shaped white magnolia wood handle, soft to the touch, with a black polypropylene bolster at the junction.
Designed with a traditional "hidden tang" construction. The blade steel extends into a slender metal rod (the tang), which is hot-fitted into the white oak handle. The tang is completely invisible, "hidden" within the wood.
To maintain your Japanese knives, hand-washing is recommended; avoid getting the handle wet. Do not use abrasive sponges; simply wipe dry with a clean cloth, and your knife will look as good as new.
Do not use a dishwasher if you want your knives to last.
