Capuchadou® knife, Gilles® by Fontenille Pataud
Fontenille Pataud is one of a group of cutlers from the Thiers area who have come together to perpetuate their mastery and expertise through a knife bearing the name of their town:
Thiers, the capital of French cutlery for over 6 centuries, and who have built the reputation of French knives by respecting the 3 key ideas: Territoriality, Quality, Morality.
Before the arrival of Laguiole, Aubrac already had its own knife called the ‘Capuchadou’. The farmers of the past used it for all their daily tasks, from eating to looking after their animals and defending themselves. The Fontenille Pataud workshop has reissued and reinterpreted the Capuchadou, the ancestor of the Laguiole, for you.
The shiny blade is made from 14C28N steel with a hardness of 58-59 HRC and a Clip Point shape. The cloverleaf is forged (not welded) by hand with lapis lazuli inlay, and each spring is freehand guilloched. Nail nick opening on the blade. Guilloché back of blade and plates.

Spring in 3 mm stainless steel, hardened and polished inside. It is fitted with a blade stop and a cloverleaf forged from solid.
Plates and bolsters: solid stainless steel.
Supplied with leather pouch.
