Windmühlenmesser Ibex 120 Knife Stainless Steel Blade and Beechwood Handle
The Windmühlenmesser IBEX 120 is the extra-large (XL) model in the outdoor range from the German manufacturer Robert Herder. Its blade profile draws inspiration from a historical design originally created for the Hadhramaut region of southern Arabia. The locking mechanism a traditional yet significantly improved slip-joint/lock-back hybrid holds the blade firmly in place whether open or closed.
It features a smooth, bright stainless steel blade made of X50CrMoV15 (also known as 1.4116; these are simply two different designations for the same material), with a hardness of approximately 57 HRC. This steel is rust-resistant and easy to maintain. The blade features a "sheep's-foot" profile. It utilizes a lock-back system to secure the blade in the open position and can also be opened using a thumb stud.
The IBEX blade boasts structural stability thanks to its convex grind. It starts with a thickness of 2.5 mm; following the grinding and polishing (finishing) process, the spine tapers, and the edge receives its final sharpening, optimized for exceptional durability and cutting performance.
The handle is made of natural beechwood a light-colored, dense wood traditionally used in Germany for work tools. It offers an excellent grip and a rustic aesthetic. The wood is heat-treated, making it resistant to the elements as well as microorganisms, fungi, and insects.
To close the knife, pull the small metal ring located on the back of the handle; this releases the blade in stages, allowing it to close gently without snapping shut on your fingers.
