Windmühlenmesser Ibex 120 Knife – Carbon Steel and Plum Wood
The Windmühlenmesser IBEX 120 is the extra-large (XL) model in the outdoor range from the German manufacturer Robert Herder. Its blade profile is inspired by a historical design originally created for the Hadhramaut region of southern Arabia. The locking mechanism a traditional yet significantly improved slip-joint/lock-back hybrid holds the blade firmly in place whether open or closed.
It features a premium, bright-finish blade made of 102Cr6 carbon steel (58–59 HRC hardness), offering a razor-sharp edge and excellent edge retention. The blade features a "sheep's foot" profile. It utilizes a lock-back system to secure the blade in the open position and can also be opened using a thumb stud.
The IBEX blade benefits from a stable geometry thanks to its convex grind. It starts with a thickness of 2.5 mm; following grinding and polishing, the spine tapers while the edge receives its final sharpening, optimized for exceptional durability and cutting performance.
Proper maintenance of the carbon steel blade is essential to prevent oxidation and the formation of a grey patina; the blade should be wiped clean after every use.

The ergonomic handle is crafted from natural plum wood a highly water-resistant timber that can display a variety of hues.
To close the knife, pull the small metal ring located on the back of the handle; this releases the lock in stages, allowing the blade to close gently without snapping shut on your fingers.
