Forged from 1 K6 Molybdene Vanadium stainless steel, with a carbon content of 0.8% and a Rockwell hardness of 58 +/- 1, the blade offers great strength and impeccable cutting performance.
This cutting resistance - obtained by a new three-stage slow-speed grinding process specific to Kai - considerably reduces friction between the blade and the product and allows for better food cutting.
