Kai Seki Magoroku Hekiju left-handed Yanagiba knife, 21 cm blade
The YANAGIBA or SUSHIHIKI (willow leaf-shaped blade): mainly used for filleting fish and preparing sashimi, thin slices of raw fish.
Usual blade length: between 21 and 24 cm.
Designed for left-handed users, Hekiju knives are also equipped with a typically Japanese single-bevel blade. The handle, which is more rounded than that of the Kinju series, is made of resin with a faux leather embossing.
1K6 stainless steel with a hardness of 58-56 HRC.
Sharpening: Single-sided.
