Wusaki Fujiko Damascus Paring Knife
Small kitchen knives known as paring knives—used for larding, peeling, and garnishing—are undoubtedly the most frequently used knives in any kitchen. They feature short, rigid blades (sometimes bird's-beak shaped) and are used for peeling small vegetables and cutting them into dice or slices.
High-end Fujiko knives feature a Damascus steel blade with a 10Cr15CoMoV stainless steel core. With a hardness of 60 HRC, the blade offers excellent edge retention while remaining easy to sharpen. The flat grind ensures precise cutting.
Symmetrical blade with a 15° edge angle per side (30° total).
The handle is crafted from olive wood, a durable timber with a refined grain pattern.
A stainless steel bolster connects the blade to the handle, which also features a stainless steel end cap engraved with the Japanese character for "Tiger." The handles are adorned with a mosaic rivet that creates a subtle contrast with the wood, while two red accent lines add a touch of color.
Do not place in the dishwasher; hand wash using a neutral soap.
Not suitable for magnetic knife racks due to the depth of the hammered finish and the weight of the knife.
