Peeling knife from the Kai Shun Damas range
This traditional Japanese knife has been produced in Seki, Japan, for centuries.
With its 6 cm blade, it's perfect for peeling and preparing round fruit and vegetables (potatoes, pears, apples). It's lightweight, easy to handle and extremely sharp, with a blade shaped like a bird's beak so you can work as close to the food as possible.
Forged from a core of VG 10 steel with a hardness of 61 HRC surrounded by 32 layers of damascus steel, the blade is extremely sturdy, cuts perfectly and, above all, lasts an incredibly long time.
This cutting resistance - obtained by a new three-stage slow-speed sharpening process specific to Kai - considerably reduces the friction between the blade and the product, enabling better cutting of food.
The slender handle, made from hard-wearing Pakka wood, comes in the traditional Japanese chestnut shape. The high-quality resins that nourish the wood make the material particularly robust and resistant to moisture. Its typical chestnut shape ensures a firm, comfortable grip when cutting, thanks to a slight ridge on the right-hand side. The continuous bristle ensures stability and balance.
