Santoku knife, hollow edge 7" - 18 cm

Blades 100% forged in France, by a closed die forging process (2012°F) from a single piece of steel. This "fully forged" process gives to the knife its high qualities of finesse, balance and durability.

Sabatier has chosen the 4116 NITRO+ steel by Ugitech®, a French stainless steel, strengthened by input of nitrogen.
Composition : Chrome-Molybdène-Vanadium (X50CrMoV15) - Rockwell hardness : 58 HRC (+/- 1)

Each knife of the Edonist series is individually hand polished and constitue an unique item of artisanal quality.
