KAI Wasabi black 21 cm Yanagiba knife

The YANAGIBA or SUSHIHIKI (willow leaf-shaped blade) is mainly used for skinning fish and preparing sashimi, thin slices of raw fish.
Usual blade length: between 21 and 24 cm - asymmetrical blade.

Wasabi black is the name of this series of Japanese knives, which is very well known in the land of the rising sun.
The 21 cm blade is made from polished stainless steel, while the handle is a blend of polypropylene and bamboo powder (a natural anti-bacterial agent). The special feature of the handle is that it is not inserted like traditional Japanese knives, but is completely embedded in the blade, making it completely fixed to the blade and therefore immovable.
Thanks to this process, no dirt is deposited on the handle.
