Windmühlenmesser Cheese Knife with Cherry Wood Handle
A good cheese knife requires a high, angled handle to allow for even pressure application.
Unlike conventional cheese knives, this one features a deliberately narrow blade. This reduces the surface area where cheese can stick during slicing.
The blade is forged from chromium-molybdenum-vanadium stainless steel (1.4116 steel) with a hardness of 56–57 HRC. This stainless alloy withstands contact with meat juices, blood, or cooking sauces without oxidizing.
Although this type of stainless steel is often difficult to polish to a fine finish, it has undergone the "blue polishing" process.
The blade has a mirror-like finish and glides effortlessly through the cheese.
Blue polishing: The bluish finish traditionally known as *Blaupließten* in German (translated as "blue polishing" or "blue grind") represents the pinnacle of Solingen craftsmanship. It is an extremely complex and rare blade-finishing technique; the Robert Herder manufactory is one of the last in the world to master and teach it.
Cherry wood handle: a local wood with reddish-brown hues and a silky feel that stands up to daily use, featuring three aluminum rivets for corrosion resistance.
This knife offers exceptional cutting comfort. Your hands do not touch the cutting board, and the cheese does not stick to the steel. It is very lightweight, weighing only 55 grams.
Do not place in the dishwasher.
