Windmühlenmesser ‘K 6’ filleting knife with walnut handle and stainless steel blade

Windmühlenmesser “K 6” Filleting Knife with walnut handle and stainless steel blade

The ‘K6’ sole filleting/slicing knife from the premium K-Series. Featuring a very long blade, this knife is designed to fillet fish (such as sole) with great precision, as well as to cut large, even slices of cured ham, salmon or roast meats.

Knives in the K-Series are fitted with stainless steel blades containing 0.7% carbon and having a Rockwell hardness of 60 HRC. The blade of this knife is polished using the ‘blue polish’ technique. This process, which has always been regarded as the most sophisticated in the Solingen knife-grinding trade, gives the blades an iridescent bluish sheen.
The walnut handle, with its aluminium rivets, is characterised by its oval, curved shape.

The handle, crafted from selected walnut wood, features a rich, dark brown colour with a distinctive grain; it is very dense and secured by four brass rivets. The slender, oval-shaped handle, unique to the K-Series, significantly reduces hand fatigue.
