The blades of the Itamae series are made of laminated steel with an Aogami Super Blue core coated between two layers of SUS410 stainless steel, hardness 59-60HRC.

Blades feature Murray Carte's signature "Carter Elbow", a distinctive taper that reinforces the tip of the blade.
