Spyderco Wakiita Bunka Bocho range from Murray Carter
A Japanese kitchen knife with a very sharp blade which means "cultural knife" in French. It is a versatile knife specially designed for cutting meat, fish and vegetables.
It is compared to the Santoku knife.
WAKIITA means "near the cutting board" and is a term used to designate senior apprentices who are skilled enough to assist senior chefs. They are considered sub-chefs on the way to becoming experienced chefs.
