Japanese chef's knife Tamahagane - blade 18 cm / 7"

Blade made of 3 layers of VG5 (core) and SUS410 (outside layers)

Hardness : VG5 comes to 61° HRC and the two SUS410 layers remain at 28 to 32 degrees to strengthen the blade

Sharpening  : easy grinding as VG5 is very thin and sus 410 softer. The recommanded sharpening angle is 14-15 degrees.

Handle : in Mikarta which fits hands very comfortable and makes the knife well-balanced
