Sharpening is done in three steps :
- step 1: electric pre-sharpening with a diamond disc to reshape the edge
blunt knives.
- step 2: electric sharpening with a thinner disc to create a sharpening angle
- step 3: manual polishing to remove the morfil and obtain a razor sharp edge, with the possibility of sharpening
serrated knives during this phase.
Equipped with a diamond abrasive surface which ensures maximum results, the angled edge is 20° which allows most of the knives to be sharpened.

You can sharpen Japanese knives but their sharpening angle being 15° you will lose the sharpening angle during their manufacture.
