High Wood Deglon Paring Knife
The right knife for peeling and preparing fruit and vegetables. It can also be used for boning poultry and small game.
A 9 cm blade in martensitic stainless steel 5CrMov15 (an iron-based stainless steel alloy with about 12% chromium and 1.2% carbon).
Usually, grades of martensitic steel are hardened and tempered, giving exceptional strength and hardness (55-57 HRC).
A carved 430 stainless steel bolster
The handle is the result of the union between two noble woods: white oak and walnut (darker shade) and crossed by a 430 stainless steel tang.
The result is a knife with original shapes and a professional blade with a traditional profile: very good resistance to shocks.
