The traditional Japanese filleting knife for sushi or extra-thin slices of meat or fish. The fine, flexible blade lets you make long cuts. Its flexibility means it can remove the maximum amount of flesh close to bones or bones without sticking. You can also remove nerves or fatty parts.
The VG10 with 1% carbon is corrosion-resistant with an HRC of 61.5% chromium to resist wear and, above all, corrosion, as well as cobalt to limit shocks and molybdenum for extra hardness.
